lemon Sponge Cupcakes

You will need:
For the Filling:
Butter- 225g
Sugar - 225g
Egg - 3
Lemon curd
Cinnamon - 1 1/2 tsp
Plain Flour - 300g
- place the flour, butter, sugar and egg into a mixer and combine. If necessary, add a little milk to help bring the mixture together.
- Add the lemon curd and cinnamon to the mixture and mix well
- Preheat oven to 180C/350F/Gas 4
- Add 12 cupcake cases to a baking tray and add the mixture
- Place in center of oven and bake for 15-20 minuets
