Easy Lemon Tarts


So whilst everyone is getting all festive and eating and baking mince pies I just can't I a one of a few that actually can't stand mince pie  therefore I decided to bake an alternative to mince pies I love lemon so I thought this would make a good alternative to mince pies.

You will need:
  • For the pastry : 

  • Plain Flour - 300g
    Butter -125g
    Sugar - 30g
    Egg - 1
    Milk -2 tbsp 
  • For the Filling: 


  • Lemon curd 

  1.  For the pastry, place the flour, butter, sugar and egg into a mixer and  combine. If necessary, add a little milk to help bring the mixture together.
  2. Turn the dough out onto a floured work surface roll out the dough and Cut into circles with a cutter and line your tins with the circled dough cut a smaller circle of dough to layer on top 
  3. Preheat the oven to 200C/400F/Gas 6.
  4. Add the lemon curd 
  5. Add the final layer of pastry on top and brush with beaten egg
  6. Transfer to the oven and bake for 20 minutes, or until set and golden-brown. Allow to cool in the tin before serving in slices. Then sit and enjoy with a nice Cuppa.
