Easy Lemon Tarts
So whilst everyone is getting all festive and eating and baking mince pies I just can't I a one of a few that actually can't stand mince pie therefore I decided to bake an alternative to mince pies I love lemon so I thought this would make a good alternative to mince pies.
You will need:
For the pastry :
- Plain Flour - 300g
Butter -125g
Sugar - 30g
Egg - 1
Milk -2 tbsp For the Filling:
Lemon curd
- For the pastry, place the flour, butter, sugar and egg into a mixer and combine. If necessary, add a little milk to help bring the mixture together.
- Turn the dough out onto a floured work surface roll out the dough and Cut into circles with a cutter and line your tins with the circled dough cut a smaller circle of dough to layer on top
- Preheat the oven to 200C/400F/Gas 6.
- Add the lemon curd
- Add the final layer of pastry on top and brush with beaten egg
- Transfer to the oven and bake for 20 minutes, or until set and golden-brown. Allow to cool in the tin before serving in slices. Then sit and enjoy with a nice Cuppa.
