Making Rock Cakes
So I'm back again with another baking post, if you remember a few posts back I did a post about baking with canderel instead of actual casting sugar because its a bit more healthier and diabetics can eat cake without it making their sugars goings through the roof. Well Id thought id do another one but this time its rock cakes and you can add anything to them that you like. If you didn't see the last post here it is Spiced Apple Cake
What you will need:
8oz self-raising flour
4oz butter
1oz Canderel
1 splash milk
1 eggs
2oz raisins (or sultanas, or chopped glace cherries)
Firstly set your oven to gas mark 6/200c and grease a banking tray then add the butter and flour to a mixing bowl and crumble with your finger tips until it looks like bread crumbs
Mix in the canderel and fruit of your choice I used sultanas for this one but I also did a batch of cherry ones too.
Mix in egg and a splash of milk just enough to make a dough
Make 8 balls and place on a baking tray and bake for 15 mins or until golden brown
Eat and Enjoy with a nice cuppa
